Simple recipe

Smoked River Cobbler (Basa Fish) with a Roasted Baby Leeks. Set the oven at 170°C/325°F/gas 3. Place the leeks in a baking tray covered with plenty of olive oil, a sprinkle of dried thyme, rosemary, sage and a few bay leaves and roast for around 30 - 40 minutes. Place the river cobbler (basa fish) into a pre-heated frying pan and cook for 10 - 14 minutes turning once during cooking time. To serve, place the leeks on the plate in a criss-cross pattern and sit the river cobbler (basa fish) on top.
