Cheesecake Filling
24 oz. cream cheese
¾ c. sugar
3 eggs
¼ c lemon juice
1 Tb grated lemon rind

Cheesecake Filling

Leave the cake in the springform pan until it is completely cooled/chilled. The glaze can be put on the cake while it is still warm, and all layers cool down together.
Prepare your favourite graham cracker or crushed cookie crust recipe for a 9” springform pan. Combine all filling ingredients and beat until smooth. Pour over crust and bake at 350F for 35 minutes.
Remove from cheesecake from the oven; cover with topping and return to oven for 10 minutes.
Remove and top with glaze.
Refrigerate in the pan overnight before serving for best consistency.
To garnish, use thin slices of lemon (remove the seeds) cut and twisted into pinwheels.

Ingredients
For the cheesecake mix:
1 lemon, juice and zest
2 digestive biscuits
255g/9oz mascarpone cheese
15g/½oz butter, softened
110g/4oz caster sugar
1 tbsp icing sugar
1 tsp clear honey
mint, to garnish
For the sauce:
½ bag frozen fruits, defrosted
icing sugar, to taste
Directions
Crush the biscuits into small pieces and combine with the butter and honey. Place this mixture into one small metal ring and press the mix evenly on the bottom of the mould.
Add the lemon juice and zest and caster sugar to the cheese, being sure not to mix it too much as this will cause the mix to split.
Spoon the mix into the ring and using a palette knife press the mix well into the moulds to prevent air gaps. Remove the ring with a hot cloth or blowtorch.
Blend most of the fruits with some icing sugar (to taste) and pass through a sieve
Place the cheesecake on to a plate and decorate the top with the sprigs of fresh mint and spoon the sauce around the side and decorate with the remaining berries.
